A Happy Easter (and peaceful Passover) to everyone!
(This was one of those semi-accidental/semi-metaphorical photos—showing how the Light touches our everyday things, and makes even the smallest and most trivial aspects beautiful. So may God touch your life.) Click on my image at right to view a larger version.
So… descending to the beautifully trivial <g>—what did y’all make for your feasts? We do Italian food for Easter (Mexican food is for Christmas): I made Drunk Chicken Pasta Salad, deviled eggs and brownies, and our son brought his astonishing spicy lasagna (it’s astonishing that you can get up from the table after eating it, rather than just sinking into a blissful stupor right there…).
And at the other (non-trivial) end of things—I woke up from my evening pre-work nap to hear that Pope Francis has died. This is of course a solemn time, but not of mourning: Francis lived a very long and fruitful life, and is now with God who called him to that work, and has now called him to eternal life. On Easter Sunday.

Vegetarian lasagna is my favorite Easter dish. (Hoping Sam will share his spicy lasagna recipe!)
This year for dessert I decided to make Pineapple Refrigerator Cake, a family recipe that my late aunt (actually a cousin of my dad’s) always made for me when I visited as a child, and when I grew up. It is heavenly, melts in the mouth, extremely rich. It was so hard for me to wait for 24 hours for it to cool that Aunt Mildred would make it the day before I arrived!
Somewhere in moving to and living in 5 states throughout my life, I lost that treasured recipe. I remembered what was in it but not the amounts. So last week I did an exhaustive search online and found it after almost 30 minutes using DuckDuckGo.
As I ate that fabulous dessert again, I closed my eyes and was that little girl in my Easter best: fancy hat, best new blue Easter dress, lacy socks and patent leather shoes. I could see my late Mom and Dad young and healthy in my mind. Amazing what a flavor can do to trigger memories. Thank you, Aunt Mildred!
Will share the recipe when I get it typed up in case anyone wants to try it. A taste of the 1940s and loved ones who once lived in eastern New Mexico…

When my girls were growing up we lived in Mexico City. At Easter I always made paella. Wonderful dish, all 3 girls would at least eat something in the cazuela. Dessert was always lemon meringue pie. My mom always made lemon meringue pie with Jello lemon pudding mix. In Mexico there are no lemons, much less Jello pudding mix, so I had to learn to make the pie from scratch. Now, back in the States, my eldest daughter does the family Easter dinner, wonderful salmon this year. But I am still asked to make the lemon meringue pie, still from scratch.
Well, a belated Happy Easter and Passover to Diana, Loretta and everyone out there. The sunshine on your photo is lovely, sunshine is certainly welcome, makes me more positive.
Thanks for the link to the drunken chicken salad recipe, I do love to cook something new (to me) and chicken with tequila sounds like a winner. I made roast lamb for our weekend, always delicious. Looking forward to the pineapple fridge cake recipe too. x
The “traditional” for us is baked ham, sweet potato, and loads of veggies including carrots, green beans, and often, a cabbage salad. (One pkg Ramen. Oodles, no seasoning; some sesame seeds, and slivered almonds. Brown all that in butter and olive oil. Add to 1/2 head shredded cabbage; mix with about 1/24 cup olive oil and 1/2 cup rice vinegar. Salt and pepper to taste; add vinegar and oil depending on the amount of cabbage b

We did traditional Easter Dinner… Ham, Mashed Taters, Gravy, Corn, Rolls and for dessert a German Chocolate Cake with Vanilla Ice Cream. We spent it with family and almost all the grandchildren, and played croquet on the back lawn! The kids love it!
Can’t wait for that Pineapple Fridge Cake recipe!!! Sounds so yummy!
I just found out on GOOGLE that there’s a name for Book 10 now. I’m so disappointed I didn’t find this information on http://www.dianagabaldon.com.
