		<description><![CDATA[A Late Post!!!   Love your books Diana!!  I&#039;m reading them again for the 5th or 6th time, getting ready for Book 10!

We did traditional Easter Dinner... Ham, Mashed Taters, Gravy, Corn, Rolls and for dessert a German Chocolate Cake with Vanilla Ice Cream.  We spent it with family and almost all the grandchildren, and played croquet on the back lawn!  The kids love it!

Can&#039;t wait for that Pineapple Fridge Cake recipe!!!  Sounds so yummy!]]></description>

		<description><![CDATA[When my girls were growing up we lived in Mexico City. At Easter I always made paella. Wonderful dish, all 3 girls would at least eat something in the cazuela.  Dessert was always lemon meringue pie. My mom always made lemon meringue pie with Jello lemon pudding mix. In Mexico there are no lemons, much less Jello pudding mix, so I had to learn to make the pie from scratch.  Now, back in the States, my eldest daughter does the family Easter dinner, wonderful salmon this year. But I am still asked to make the lemon meringue pie, still from scratch.]]></description>

		<description><![CDATA[Vegetarian lasagna is my favorite Easter dish. (Hoping Sam will share his spicy lasagna recipe!) 

This year for dessert I decided to make Pineapple Refrigerator Cake, a family recipe that my late aunt (actually a cousin of my dad&#039;s) always made for me when I visited as a child, and when I grew up. It is heavenly, melts in the mouth, extremely rich. It was so hard for me to wait for 24 hours for it to cool that Aunt Mildred would make it the day before I arrived! 

Somewhere in moving to and living in 5 states throughout my life, I lost that treasured recipe. I remembered what was in it but not the amounts. So last week I did an exhaustive search online and found it after almost 30 minutes using DuckDuckGo.

As I ate that fabulous dessert again, I closed my eyes and was that little girl in my Easter best: fancy hat, best new blue Easter dress, lacy socks and patent leather shoes.  I could see my late Mom and Dad young and healthy in my mind. Amazing what a flavor can do to trigger memories. Thank you, Aunt Mildred!

Will share the recipe when I get it typed up in case anyone wants to try it. A taste of the 1940s and loved ones who once lived in eastern New Mexico...
